March can be pretty depressing. It’s cold, it’s windy, and there were no diamonds for you on Valentine’s Day—again. You bought yourself some chocolates—twice—and ate all of them in front of the TV while the gym took their automatic payment from your checking account. So! It’s time for a yummy, hearty, good-for-you pancake!
This pancake is thick with oats, bananas and raisins—top it with a little butter and maple syrup, and the month looks a whole lot better, doesn’t it? Three things about this recipe: One, don’t rush—low and slow, baby, low and slow—make sure the pan is hot, the heat low, and cook slowly—you want the inside to cook before the outside gets too brown. Two, this is such a hearty pancake that one, possibly two, is a filling meal, and three, leftover cooked pancakes freeze and then reheat well in the toaster. If you make one batch, you’ll probably have enough pancakes for two, possibly three days. What’s stopping you? Come on, let’s make pancakes!

INGREDIENTS
- 1 cup oats—I use the quick-cooking kind, not the instant-cooking kind
- 1 cup flour
- ¼ cup light brown sugar
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- 1¼-1½ cups of milk—yogurt can be substituted for up to half of the milk
- 2 eggs
- ½ teaspoon vanilla
- 2 ripe bananas, mashed
- 1 cup raisins
- ¼ cup melted butter
DIRECTIONS
- Mix oats, flour, brown sugar, baking powder, baking soda and cinnamon in a medium bowl.
- In a larger bowl mix together milk, eggs and vanilla.
- Stir dry ingredients into liquid ingredients.
- Fold in mashed banana, raisins and melted butter.
- Heat a skillet, reduce heat to low, and pour 1/3 cup batter into hot pan.
- Cook pancake on first side until sides are dry, about 2 minutes, then turn pancake over and cook until bottom is brown and inside is firm.
- Serve with butter and maple syrup, honey, marmalade, or cinnamon sugar! Makes ten 5″ pancakes—the first one will probably have to be discarded or fed to the dog. Isn’t that usually the way of it? 🙂 Enjoy!
