Blackberry Sorbet

I’ve been having so much fun with my ice cream makers 🙂 I hope you have one, too! Personally, homemade blackberry sorbet tastes even better than fresh blackberries, honest! It’s so rich, and sooo fruity, icy, refreshing, delicious…, and fabulous!!

Blackberry Sorbet is easy to make. Just be sure you have enough time to chill everything completely before putting it in the ice cream machine.

Blackberry Sorbet

INGREDIENTS

  • 1ÂĽ cups sugar
  • 1 cup water
  • 1½ lbs fresh blackberries—3-4 baskets
  • 2 Tablespoons freshly squeezed lemon juice—one lemon needed

DIRECTIONS

  1. Bring sugar and water to a boil. Stir until sugar dissolves, then boil syrup for an additional 3 minutes.
  2. Remove from heat and let cool—about 3 hours.
  3. Puree blackberries and cooled syrup in blender until smooth.
  4. Strain into a 4 cup measuring jug or bowl, discarding the seeds and pulp.
  5. Stir lemon juice into the sugar-water-juice mixture.
  6. Refrigerate until completely cold.
  7. Process cold mixture in an ice cream maker until very thick and slushy, about 20 minutes.
  8. Remove to a covered freezer container and freeze until firm. Keep frozen until ready to serve.

This recipe can be made one week ahead 🙂
