Peanut Butter Blossoms

There are other cookies on this plate, but this recipe is for the large cookie on each side of the plate, the one with either a Hershey’s Hugs or Kiss in the middle. My daughter, Abby, is the cookie-baker in our family, and she’s terrific at it. Each cookie has a perfect shape. Each batch is a uniform size. She even counts the M&Ms and the chocolate chips to make sure each cookie, has the perfect number of candy morsels!

This is one of the Classic American Cookies, Peanut Butter Blossoms—sometimes called Peanut Butter Kisses. Abby prefers to use Hugs, over Kisses, in the middle. The Hugs do get a little brown in the oven, so is it worth it? Or would you rather use the traditional Hershey’s Kiss?

You can find versions of this recipe everywhere, but this is the one that Abby uses. It makes about 48 cookies.

Peanut Butter Blossoms

INGREDIENTS

  • 1 1/3 cup all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened (but not runny)
  • ½ cup sugar
  • ½ cup packed light brown sugar
  • ½ cup creamy peanut butter—Abby is a Skippy girl!
  • 1 large egg
  • 1 teaspoon vanilla
  • Extra granulated sugar to roll the dough in
  • About 48 Hershey Hugs or Kisses, unwrapped

DIRECTIONS

  1. Preheat oven to 350°.
  2. Whisk flour, baking soda and salt in a bowl to combine then set aside to aerate.
  3. In the bowl of an electric mixer, cream the butter until light and fluffy, about 3-5 minutes, then beat in the peanut butter and the white and brown sugars.
  4. Beat in the egg and the vanilla extract.
  5. Gradually add in the blended dry ingredients.
  6. Pinch off walnut sized pieces of the dough and roll into balls—you should have about 48 balls.
  7. Roll the balls in granulated sugar and place 1″ apart on an ungreased cookie sheet.
  8. Bake cookies for 8-10 minutes, or until cookie just begins to color.
  9. Remove tray from oven and press an unwrapped Hug or Kiss into the middle of each cookie—right side up or upside down.
  10. Return the tray to the oven and cook for an additional 3 minutes.
  11. Remove from oven. Let cool on tray for a minute then remove cookies to a wire rack to cool.

Thanks for stopping by for a cookie today!
