S’mores Bars

These S’mores Bars are all dressed up and ready for Halloween, but we began making them this summer when our camping trip was cancelled. My daughter, Abby, looooves s’mores and we were looking for something to soften the blow of our cancelled trip.

Found them! Ooey-gooey-sticky-messy, but manageable, S’mores Bars! IMHO, they are even better than the real thing!

S’Mores Bars

INGREDIENTS

  • ½ cup butter, room temperature
  • ¼ cup brown sugar
  • ½ cup sugar
  • 2 king-sized milk chocolate bars
  • 1 large egg
  • 1 7oz jar (½ cup) marshmallow creme/fluff
  • 1 tsp vanilla extract
  • 1 1/3 cups flour
  • ¾ cup graham cracker crumbs—about 7 full-sized graham crackers, processed or pounded until fine
  • 1 tsp baking powder
  • ¼ tsp salt

DIRECTIONS

  1. Preheat the oven to 350°.
  2. Grease an 8″ square baking pan, set aside.
  3. Use an electric mixer to cream together butter and sugar until light and fluffy.
  4. Beat in egg and vanilla. Set aside.
  5. Meanwhile, whisk together flour, graham cracker crumbs, baking powder and salt.
  6. Slowly add flour mixture to the creamed butter mixture until combined.
  7. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan.
  8. Place chocolate bars over dough—2 king-sized Hershey’s bars should fit perfectly side by side.
  9. Spread chocolate with marshmallow creme or fluff.
  10. Place remaining dough in a single layer on top of the fluff. This is most easily achieved by flattening the dough into small shingles and piecing them together on top of the fluff.
  11. Bake for 30 to 35 minutes, until lightly browned.
  12. Be sure to cool completely before cutting into bars.

This recipe makes 16 bars, depending on how you cut them, right? 🙂
