Pan-Fried Halibut

I love this recipe! The lemon peel and the panko are the magic ingredients used to enhance that good quality halibut—often found at Costco. If I were collecting my favorite favorite recipes, this would definitely be one of my top ten! It was found on Epicurious.com in 2008. 

Pan-Fried Halibut

INGREDIENTS

  • 2 lbs. halibut—1½” thick—fillets, not steaks
  • 1½ cups (3.5 oz.) panko—Japanese breadcrumbs
  • Grated peel of one lemon—about 2 teaspoons
  • 2 teaspoons Kosher salt
  • Pepper, to taste
  • 1 Tablespoon finely chopped parsley
  • 3 egg whites
  • ¼ cup buttermilk
  • 3 Tablespoons olive oil

DIRECTIONS

  1. Cut fish into single serving pieces.
  2. Combine panko, lemon peel, salt, pepper and parsley in a shallow dipping bowl.
  3. In another shallow dipping bowl combine egg whites and buttermilk.
  4. Dip fish into egg white mixture and then into panko mixture and set aside.
  5. Heat olive oil in a large skillet, and when oil is hot add panko-covered fish.
  6. Cook fish until panko is golden and fish is opaque in center, 3-5 minutes (depending on thickness of fish) on each side.
  7. Remove to serving plate, and enjoy!
